How to deal with overprotective parents at age 18??

Hey im an 18 year old high schooler, i've been 18 fora while now and my parents are still on my case about everything. I've tried getting a job but my dad is very strict about this and simply wont let me. I'm trying really hard to be independant and pay for my own things. but he just wont let me live my life. Just the other day he threw a fit because i got a haircut that he didnt approve of.They even get mad at me when i stay up past 11 on a weekend...and are constantly calling me when im out with my friends. And when i tell them where i am they sometimes sneak around the area to see if my car is there. I have no idea what to do, i've never done anything wrong, i've always told them "who, waht, when, and where." and yet they still treat me as if i'm 8 instead of 18. can someone PLEASE tell me how i can workout a solution w/ my parents? I would move out and live on my own, but i dont have the skills needed to support myself because my parents have kept me from getting a job
